Ice Cream with Brownie

The ultimate indulgence – chewy, chocolatey, dense brownies with paired with soft vanilla ice cream, and topped with hot chocolate sauce. It’s hard to tell who steals the show here!

 

Brownie Recipe (taken from the hummingbird bakery cookbook)

Ingredients

Dark chocolate
200g
roughly chopped
Unsalted butter
175g
Caster sugar
325g
Plain flour
130g
Egg
3
Icing sugar
(garnish)
  • 33 x 23 x 5 cm baking tray, lined with greaseproof paper
  • Makes about 12 portions
Directions

Step 1
Preheat the oven to 170 °C

Step 2
Melt chocolate and butter in heatproof bowl over a saucepan of simmering water (do not let the base of the bowl touch the water). Leave until melted and smooth.

Step 3
Remove from heat.

Step 4
Add sugar and stir until well incorporated.

Step 5
Add the flour and stir until well incorporated.

Step 6
Finally stir in the eggs and mix until thick and smooth.

Step 7
Spoon the mixture into the prepared baking tray and bake in preheated oven for about 30-35 minutes, or until flaky on top but still soft in the center.

Step 8
Leave to cool completely.

Step 9
Pair with ice cream and chocolate syrup!

Alternative Serving Suggestions: Add walnuts, pecan nuts, or chocolate chips if you like!
